Oat Flour Skillet Cookie

Sometimes you just want a giant cookie, and this oat flour skillet cookie is exactly that. It’s made with oat flour, which gives it a great chewy/crunchy texture (like an oatmeal cookie!). I highly recommend topping it with vanilla ice cream or whipped cream.

Description

This oat flour skillet cookie is simple and quick to make and pairs perfectly with vanilla ice cream!


Ingredients

Scale
  • 3 tbsp butter, melted
  • 1/3 cup brown sugar
  • 1 egg (or 1 flax egg*)
  • 1/2 tsp vanilla
  • 3/4 cup oat flour**
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup chocolate chips

Instructions

  1. Preheat oven to 350F. Grease a cast iron skillet pan (or a small pie plate) with butter or oil.
  2. In a medium bowl, whisk together the melted butter and brown sugar until well combined. Then whisk in the egg (or flax egg – make sure it has set for 5 minutes before adding) and vanilla until well combined. 
  3. Fold in the oat flour, baking soda, and salt until combined. 
  4. Fold in the chocolate chips.
  5. Place the dough into the greased pan and bake for around 20 minutes, depending on how cooked you want the skillet cookie to be.
  6. Let cool for 5-10 minutes before serving and eating. Store in an airtight container at room temperature for up to 3-4 days. 

Notes

*To make 1 flax egg, combine 1 tbsp ground flaxseed and 2.5 tbsp water in a bowl and let sit for 5 minutes before using it in the recipe. 

**You can make your own oat flour by blending oats into a fine flour.
