Description
The only vegan and gluten free caesar dressing you’ll ever need! This recipe is super simple, perfect on a salad or even in a wrap or sandwich.

- 1 cup roasted unsalted cashews
- 1 cup hot water (for soaking)
- 1/2 cup water (for blending)
- 2 tbsp lemon juice
- 2 tsp garlic, minced
- 2 tsp dijon mustard
- 1 tsp red wine vinegar (or white vinegar)
- 1/4 tsp black pepper
- dash of salt
Instructions
- Place the cashews in a bowl and cover with ~1 cup of hot water (until all cashews are submerged). Soak the cashews for 2-3 hours, or until soft.
- Drain the water and add the soaked cashews to a food processor or blender. Add 1/2 cup fresh water (cold – room temperature) and blend until super creamy.
- Add the rest of the ingredients, and pulse or mix with a spoon until well combined.
- Store in the fridge for up to 4-5 days in a mason jar or other container.
