Description
All you need is one bowl and 9 ingredients for this blondie recipe. Feel free to use different nut butters and mix-ins!
Ingredients
- 1/2 cup butter, melted and cooled
- 1 cup brown sugar
- 2 eggs, room temperature
- 1/4 cup nut or seed butter*
- 1 1/2 tsp vanilla
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp kosher salt
- 2/3 cup chocolate chips
Instructions
- Preheat oven to 350F. Line with parchment or grease an 8×8 baking pan.
- In a large bowl, melt the butter (you may brown it if you’d like!) and let it cool for ~10 minutes while you prepare and gather your other ingredients.
- Beat the butter and brown sugar together, then incorporate the nut butter. Once well combined, add the eggs, one at a time, and the vanilla.
- Stir in the flour, baking powder, and salt. Once well combined, stir in the chocolate chips.
- Spread mixture into prepared pan and bake for 30-35 minutes, depending on how gooey you want them to be. Let cool before cutting.
- Enjoy with some salted caramel, ice cream, or as is!
Notes
*You may use any nut or seed butter here! Peanut butter, almond butter, tahini, cashew butter, sunflower seed butter, etc.
For Nut Free: Use a seed butter like tahini (sunflower seeds) or sunflower seed butter.
For Gluten Free: Use gluten free all-purpose flour.
For Vegan: Use vegan stick butter, and substitute 6 tbsp aquafaba or 2 flax eggs (5 tbsp ground flax + 3 tbsp water, let sit for 10 mins) for the 2 eggs. Disclaimer, I haven’t tried this, but it should work well!
