2-Ingredient Pineapple Coconut Sorbet

This pineapple coconut sorbet is possibly one of the easiest frozen desserts ever, and only requires 2 ingredients. If you’ve ever had the Dole whip from Disneyland… this is basically an easy homemade version. All you do is blend frozen pineapple and coconut milk in a food processor. Super refreshing and perfect for a hot summer day!

I recommend a large food processor (it may be larger/more powerful than a blender and has a wider surface to blend), but if you don’t have one then a high-speed blender should work nicely. You may want to blend in a couple batches depending on how large and powerful your blender/processor is.

A super easy and refreshing pineapple coconut sorbet recipe that only uses 2 ingredients.


Ingredients

For the pineapple sorbet:

  • 4 cups frozen pineapple
  • 1/4 cup coconut milk (the thick white part)

Topping suggestions:

  • shredded coconut
  • mint leaves

Instructions

  1. Place the frozen pineapple and coconut milk in a food processor or high speed blender. Blend until smooth (this should take around 5 minutes).
  2. Scoop into loaf tin, then cover and freeze for 1-2 hours.
  3. Scoop into serving bowls, top with shredded coconut and/or mint leaves (optional) and enjoy!
