A super easy and refreshing pineapple coconut sorbet recipe that only uses 2 ingredients.
Ingredients
For the pineapple sorbet:
- 4 cups frozen pineapple
- 1/4 cup coconut milk (the thick white part)
Topping suggestions:
- shredded coconut
- mint leaves
Instructions
- Place the frozen pineapple and coconut milk in a food processor or high speed blender. Blend until smooth (this should take around 5 minutes).
- Scoop into loaf tin, then cover and freeze for 1-2 hours.
- Scoop into serving bowls, top with shredded coconut and/or mint leaves (optional) and enjoy!
