Strawberry Lime Granita Recipe

(vegan, gluten free, nut free)

This strawberry lime granita is the perfect refreshing summer frozen dessert. It only takes 4 ingredients and the bulk of the work is done by the freezer (although I won’t lie, scraping it does take some elbow grease… you’ll see what I mean).

Granita is a fluffy yet crunchy Italian dessert with a texture similar to shaved ice. You make it by blending together water, fruit juices, and sugar, freezing it, and then scraping the ice crystals with a fork. You can try it with other fruits and flavourings as well!

Description

The perfect refreshing summer frozen dessert. Only 4 ingredients!


Ingredients

Scale
  • 2 cups frozen strawberries
  • 1 1/4 cup water
  • 3 tbsp agave syrup*
  • zest of 1 lime

Instructions

  1. Add the frozen strawberries, water, agave nectar, and lime zest to a blender. Blend until well combined and very smooth (no lumps, should be quite liquidy).
  2. Pour mixture into a loaf pan, flat baking sheet, or freezer safe container (don’t fill it completely to ensure extra space for the ice to expand!). Freeze until solid (around 4-6 hours depending on the temperature of your freezer – I usually begin freezing in the morning or the night before).
  3. Once frozen, scrape with a fork until fluffy & icy granita forms! Serve immediately and store any leftovers in the freezer. 

Notes

*You may substitute the agave syrup with maple syrup, just note that it will be less sweet! I don’t recommend using honey, as it doesn’t dissolve well in cold mixtures.
