Description
A fun s’mores popcorn recipe, made with melted chocolate, graham crackers, and mini marshmallows.
Ingredients
- 1/4 cup dry popcorn kernels (makes ~8 cups popped popcorn)
- 1 cup chocolate chips (milk, semi-sweet, or dark)
- 1/4 tsp salt
- 1 1/3 cup graham crackers, broken into small pieces
- 1 cup mini marshmallows
Instructions
- Line a baking sheet with a silicon baking mat or parchment paper.
- Pop the popcorn using desired method (no oil or butter needed).
- Meanwhile, melt the chocolate in the microwave (in 30 second intervals) or in a double boiler over the stove. Once smooth and melted, mix in the salt.
- In a large bowl, mix together the popcorn, mini marshmallows, and broken up graham crackers. Gently fold in the melted chocolate until well combined.
- Evenly spread the mixture onto the prepared baking sheet. Place in the fridge and let chill for 15 mins, or place in the freezer and let chill for 5 minutes until solid. The chocolate should set and harden.
- Break into pieces, top with more marshmallows & graham crackers if you want, and enjoy! Store in an airtight container on the counter for up to a week.
Notes
Make it Vegan: Use vegan chocolate, vegan marshmallow (or omit marshmallows), and ensure the graham crackers you choose don’t contain any dairy, eggs, or honey.
Make it Gluten Free: Use gluten free graham crackers, gluten free chocolate chips, and ensure the marshmallows you choose are gluten free.
Make it Nut Free: Ensure the chocolate, graham crackers, and marshmallows you choose are nut free.
