This pasta recipe by Pinch of Yum is super simple and ridiculously good. The sauce is made in a blender with cashews and roasted red peppers that pack it with flavour and make it super creamy/smooth. You can make the sauce and the blistered tomatoes beforehand, so when dinner time rolls around all you have to do is cook the pasta. The recipe makes a ton of sauce so you get leftovers the next day! I also like to add chicken or chickpeas for some extra protein.
