If you’re craving banana bread but only want to make a single serving, this Banana Bread Mug Cake recipe is perfect for you! All you have to do is mix the ingredients in a mug, microwave it, and then BAM you just made some banana bread. It’s magic, really. And it only takes 5 minutes!

  • quick oats (or rolled for a chewier texture)

Should I use quick or rolled oats?

I use quick oats in this recipe, but it also works well with thick rolled oats! The only difference is that quick oats are chopped into smaller pieces and thus absorb more liquid quicker, whereas rolled oats are larger and denser, giving the mug cake more chew. They both work, so just choose what you prefer!

Do I have to use a mug?

No! You can use any microwavable bowl or mug. Using a mug just makes it feel more cozy 🙂

Use dairy free milk to make it vegan & dairy free

Changing the type of milk should not change the texture of the mug cake. Use any type of dairy free milk you’d like!

Use gluten free oats and flour to make this gluten free

I recommend using a gluten free flour such as GF all-purpose if you don’t want to adjust the recipe at all. Using oat flour should work as well, just keep in mind you will get a slightly less fluffy texture. I do not recommend using almond flour for this recipe (you’d have to adjust the proportions).

Add in chocolate chips and/or nuts if you’d like!

I personally never make this recipe without chocolate chips (nor do I ever make banana bread without chocolate chips…), but that’s just my preference! You can also add in chopped nuts or seeds to add a bit of a crunch.

Ingredients

  • 1/2 banana, mashed
  • 1 tbsp chia, hemp, or ground flax seed (optional)
  • 1 tbsp milk of choice
  • 1/2 tsp vanilla
  • 1/4 cup quick oats (or rolled oats for a chewier texture)
  • 2 tbsp whole wheat flour
  • 2 tsp brown sugar
  • 1 tsp baking powder
  • dash of cinnamon
  • 1 tbsp chocolate chips (optional)
  • 1 tbsp walnuts, chopped (optional)

Instructions

  1.  In a medium-sized mug, mix together the mashed banana, chia/hemp/flaxseed, milk, and vanilla until well combined.
  2. Mix in the oats, whole wheat flour, brown sugar, baking powder, and cinnamon until combined (the batter should have no lumps of flour).
  3. Fold in the chocolate chips and nuts if you’re choosing to.
  4. Microwave the mug cake for 80 seconds, until soft, fluffy, and cooked through. Depending on your microwave, you may have to microwave for longer or shorter than 80 seconds.
