Banana bread in a mug. What more needs to be said?
Ingredients

- 1/2 banana, mashed
- 1 tbsp chia, hemp, or ground flax seed (optional)
- 1 tbsp milk of choice
- 1/2 tsp vanilla
- 1/4 cup quick oats (or rolled oats for a chewier texture)
- 2 tbsp whole wheat flour
- 2 tsp brown sugar
- 1 tsp baking powder
- dash of cinnamon
- 1 tbsp chocolate chips (optional)
- 1 tbsp walnuts or pecans, chopped (optional)
Instructions
- In a medium-sized mug, mix together the mashed banana, chia/hemp/flaxseed, milk, and vanilla until well combined.
- Mix in the oats, whole wheat flour, brown sugar, baking powder, and cinnamon until combined (the batter should have no lumps of flour).
- Fold in the chocolate chips and nuts if you’re choosing to.
- Microwave the mug cake for 80 seconds, or until soft, fluffy, and cooked through. Depending on your microwave, you may have to microwave for longer or shorter than 80 seconds.
