This banana bread mug cake recipe is perfect if you’re craving banana bread but only want to make a single serving. It only takes 5 minutes, all you have to do is mix the ingredients in a mug (or small bowl) and microwave it. It’s magic, really.

Feel free to add in chocolate chips and chopped nuts if you’d like.

Banana bread in a mug. What more needs to be said?


Ingredients

Scale
  • 1/2 banana, mashed
  • 1 tbsp chia, hemp, or ground flax seed (optional)
  • 1 tbsp milk of choice
  • 1/2 tsp vanilla
  • 1/4 cup quick oats (or rolled oats for a chewier texture)
  • 2 tbsp whole wheat flour
  • 2 tsp brown sugar
  • 1 tsp baking powder
  • dash of cinnamon
  • 1 tbsp chocolate chips (optional)
  • 1 tbsp walnuts or pecans, chopped (optional)

Instructions

  1.  In a medium-sized mug, mix together the mashed banana, chia/hemp/flaxseed, milk, and vanilla until well combined.
  2. Mix in the oats, whole wheat flour, brown sugar, baking powder, and cinnamon until combined (the batter should have no lumps of flour).
  3. Fold in the chocolate chips and nuts if you’re choosing to.
  4. Microwave the mug cake for 80 seconds, or until soft, fluffy, and cooked through. Depending on your microwave, you may have to microwave for longer or shorter than 80 seconds.
