Stovetop Beets with Feta and Walnuts

This stovetop beet dish is a simple way to serve beets. All it is is beets, oil, garlic, salt + pepper, feta cheese, and walnuts (or pecans, pistachios) for extra crunch. It’s great as a side dish but also can be added to a spinach salad with balsamic dressing.

This recipe cooks the beets in water before sautéing in a pan with the other ingredients. I don’t give a time estimate for how long to cook the beets for because it will depend on how many you’re cooking, how much water your use, and the desired texture. Instead, my recommendation is to keep an eye on the beets and check them with a fork every 10 minutes or so until they are tender and have the texture of a cooked carrot. The fork should easily pierce through, but the beets should still hold their shape and not be mushy.

Description

A simple beet side dish with feta cheese and walnuts.


Ingredients

Scale
  • 68 medium sized beets, washed, peeled & diced
  • 1/2 tsp salt (for salting the water)
  • 1 tbsp vegetable oil or butter
  • 2 cloves (2 tsp) garlic, minced
  • 1 tsp freshly ground black pepper
  • 1/4 cup crumbled feta cheese
  • 1/4 cup unsalted walnuts, pecans or pistachios, chopped

Instructions

  1. Cook the beets (this can be done beforehand): Place beets into a medium pot filled with cold salted water (1/2 tsp salt). Ensure the water level is around 1 inch higher than the beets. Bring to a boil over high heat, then lower the temperature, cover the pot, and cook until the beets are fork tender (check them with a fork every 10 mins) and have the texture of a cooked carrot. The fork should easily pierce through, but the beets should still hold their shape and not be mushy. 
  2. Once the beets are cooked, drain the water and set the beets aside. 
  3. Heat the oil/butter in a large pan over medium heat. Add garlic and heat for 30sec-1min. Add the beets and sauté for 3-4 minutes, until warm. Mix in the black pepper. 
  4. Remove pan from heat and mix in the feta and walnuts. Serve immediately. 
  5. Store leftovers in a sealed airtight container in the fridge for 3-4 days.

Notes

Make it Nut Free: Replace the walnuts with pumpkin seeds or sunflower seeds.
