Description
A simple egg breakfast sandwich, with spinach, cheese, peppers, and tomatoes.
Ingredients

- 1 large egg
- 1 bagel (plain, whole wheat, everything bagel, etc.)
- 1/2–1 tbsp mayonnaise
- 1/2–1 tsp sriracha (optional)
- 1 slice cheddar cheese
- 2 tomato slices (Roma works well)
- 1/3–1/2 green bell pepper, sliced
- handful of spinach
Instructions
- Crack the egg into a shallow bowl (grease the bowl beforehand if you’d like). Microwave with microwaveable cover on for 45-60 seconds, or until white is opaque and yolk is cooked through (microwave time will depend on the strength of your microwave).
- Slice the bagel in half and toast until lightly browned.
- Spread mayonnaise and sriracha on toasted bagel. Top with cheese, cooked egg, tomato, green bell pepper, and spinach (layer it in any way you’d like – you don’t have to follow this order!).
- Microwave sandwich for ~20 seconds, or until cheese has slightly melted.
