Bagel Breakfast Sandwich

This bagel breakfast sandwich is perfect for when you’re short on time and need a quick and easy meal. Feel free to customize it to your liking!

You can cook the egg however you want, but I find the quickest way is to crack it in a greased shallow bowl, cover it with a microwaveable cover, and microwave it for 45-60 seconds. The time depends on how hot your microwave is, but cook it until the white is firm and the yolk is hard.

Description

A simple egg breakfast sandwich, with spinach, cheese, peppers, and tomatoes.


Ingredients

Scale
  • 1 large egg
  • 1 bagel (plain, whole wheat, everything bagel, etc.)
  • 1/21 tbsp mayonnaise
  • 1/21 tsp sriracha (optional)
  • 1 slice cheddar cheese
  • 2 tomato slices (Roma works well)
  • 1/31/2 green bell pepper, sliced
  • handful of spinach

Instructions

  1. Crack the egg into a shallow bowl (grease the bowl beforehand if you’d like). Microwave with microwaveable cover on for 45-60 seconds, or until white is opaque and yolk is cooked through (microwave time will depend on the strength of your microwave).
  2. Slice the bagel in half and toast until lightly browned.
  3. Spread mayonnaise and sriracha on toasted bagel. Top with cheese, cooked egg, tomato, green bell pepper, and spinach (layer it in any way you’d like – you don’t have to follow this order!).
  4. Microwave sandwich for ~20 seconds, or until cheese has slightly melted.
