Description
A quick and easy breakfast that’s great for busy mornings.
Ingredients
- 1/2 cup quick cooking oats
- 1–2 tbsp hemp, chia, and/or ground flaxseed (optional)
- 1/2 cup (+ 1–2 tbsp extra) milk of choice
- dash of cinnamon
- 1/2–1 tbsp chocolate chips
Topping suggestions:
- Nut butter (peanut, almond, tahini, etc.)
- Nuts/seeds (walnuts, pumpkin seeds, etc.)
- Fresh or frozen fruit (banana, blueberries, strawberries, etc.)
Instructions
- In a medium bowl (the bowl you plan to eat out of), mix together the quick cooking oats, hemp/chia/ground flaxseed, and milk (start with 1/2 cup milk – you can add more later).
- Cover bowl with microwave cover (to prevent splattering), and microwave for 90 seconds (1 minute 30 seconds).
- Remove from microwave and mix in 1-2 more tbsp milk until you reach a consistency you like. Mix in cinnamon and chocolate chips until the chocolate has slightly melted.
- Top with whatever you’d like (see suggestions above) and enjoy!
Notes
For overnight oatmeal: Mix everything (except the chocolate chips) together in a small serving bowl, cover, and place in the fridge the night before. Then microwave in the morning until warm, add extra milk, mix in the chocolate chips, and add toppings.
If you want the chocolate chips to be melted, the key is to add them right after you microwave the oats, and then mix them in so they heat up!
For Vegan & Dairy Free: Use dairy free milk (soy, oat, almond) and dairy free chocolate chips.
For Gluten Free: Use gluten free quick cooking oats.
