Description
A simple granola recipe that’s great with milk, yogurt, or on it’s own.
Ingredients

- 2 cups thick rolled oats
- 1 cup pecans, finely chopped
- 1 tsp ground cinnamon
- 1 tsp pumpkin pie spice (or allspice, or a warm spice blend)
- 1/2 tsp salt
- 1/4 cup oil (vegetable, canola, avocado, olive)
- 1/4 cup pure maple syrup (“dark” if possible)
Instructions
- Preheat oven to 350F. Line a baking sheet with a silicon baking mat or parchment paper.
- In a medium-large bowl, mix together the oats, chopped pecans, cinnamon, pumpkin pie spice, and salt until combined. Then mix in the oil and maple syrup until everything is well combined and coated.
- Spread granola evenly onto baking sheet and bake for 18-20 minutes, stirring once halfway through to ensure even baking.
- Let cool for 10 minutes, then break apart into small pieces and store in an airtight container at room temperature for up to a month (glass jars work well for this).
Notes
For Gluten Free: Use gluten free oats.
